Merengues en espiral
Aunque si tienen forma de Macarons...son...en realidad...merengues!
Althoug they are a bit like macarons, they are actually meringues!
Asà que NO son Macarons, pero por muy poco. Digamos que son primos hermanos. Estos Macarons falsos...no tienen almendra y los Macarons auténticos sà tienen.
Then, those aren't macarons, but close enough. We can call them brothers (or cousins). Macarons got almond, and meringues are almond-free for all those people with allergies, It could be a good idea.

Merengue rellenos de Crema de Chocolate a la Naranja
Ingredientes
Para el merengue
- 4 Claras de Huevo a temperatura ambiente
- 250 gramos de azúcar glas extrafino
- Esencia (yo he utilizado esencia de vainilla)
- Colorante en pasta (opcional)
- 100 gr de Chocolate Negro
- 300 gr de azúcar glas extrafino
- 150 gr de mantequilla sin sal a temperatura ambiente
- 50 ml de Nata para montar
- 2 cucharadas de Sirope de Naranja
Preparación del relleno
Llevamos la nata a ebullición y vertemos sobre el chocolate troceado. Añadimos la naranja o el licor y mezclamos hasta obtener una crema sedosa. Una vez a temperatura ambiente, usamos este ganache para hacer una buttercream: añadimos mantequilla, azucar y batimos hasta obtener una crema sedosa y suave. Rellenamos usando una boquilla circular y manga pastelera.
Llevamos la nata a ebullición y vertemos sobre el chocolate troceado. Añadimos la naranja o el licor y mezclamos hasta obtener una crema sedosa. Una vez a temperatura ambiente, usamos este ganache para hacer una buttercream: añadimos mantequilla, azucar y batimos hasta obtener una crema sedosa y suave. Rellenamos usando una boquilla circular y manga pastelera.
Montamos las claras a punto de nieve. Añadimos el azúcar a través de un colador y mezclamos con una espátula. Una vez el azúcar esté integrado añadimos la esencia y batimos a máxima potencia durante 10 minutos.
Con la ayuda de una boquilla 1M de Wilton y una manga, dibujamos espirales sobre papel antiadherente. Dejamos secar 10 minutos y horneamos a 100º C durante 90 minutos. Dejamos enfriar los merengues en la bandeja del horno (dentro del horno) hasta que se endurezcan. Si abrimos la puerta podrÃan agrietarse. Esperamos un par de horas y podremos sacarlos.
Nota: Para obtener el efecto marmolado, dibujamos unas lÃneas de colorante en el interior de la manga. Desde la boquilla hasta la mitad.
Orange and chocolate cream stuffed meringues
Ingredients
Meringue
- 4 egg whites
- 250 g icing sugar
- essence (for example vanilla)
- food colour (that's up to you)
- 100 g chocolate
- 300 g icing sugar
- 150 g butter
- 50 ml of whipped cream
- 2 tablespoons of orange paste or marmalade, (or Grand Marnier ummm)
How to make the filling
Boil the cream, and pour it over the chopped chocolate. Mix slowly till the chocolate softens and add the orange paste or licquor. Make a nice buttercream with this, just add the chocolate cream (room temperature) to the mixing bowl of your stand mixer, add butter, icing sugar and mix till it becomes soft, smooth and delicious :) Fill using a pastry bag with a round tip.
Whip the egg whites till they are firm, adding the sugar slowly at the same time to make it smooth and brilliant. Add essence and put gently whip. (This process will take about 7-10 minutes)
Use a 1M Wilton tip on a pastry bag, and draw some swirls on to a baking paper. Let them dry for 10 minutes and bake them at 100º Celsius, during almost 90 minutes. When finish, don't open the oven or they will crack. Just let them dry for two hours. ¡Be patient!
Note: to achieve a good marble effect, draw some food colour lines inside the pastry bag. From the tip, to the center.
